Cheese Making

   Oaxaca cheese is a traditional Mexican cheese made from cow’s milk. It is named after the state of Oaxaca in Mexico, where it is thought to have originated. 

Very similar to mozzarella, Oaxaca cheese is a semi-hard fresh white stringy cheese that’s easily shredded and used as a topping or easily melted. It is also referred to as “quesillo” cheese in some places, and is the classic cheese used in Mexican cuisine, a popular ingredient in dishes such as enchiladas, quesadillas, and tacos.

   On the same day we visited the home of the papermaker, we visited the home of a woman who makes fresh cheese daily for an explanation and demonstration on making cheese. The finished cheese is made into long strips made into a ball - similar in appearance to a skein of yarn
