Cooking Classes
This time during our stay in Oaxaca we opted to try a cooking class, something we wished we had done in 2020. As it turned out, friends visiting from the states created an opportunity for attending two separate cooking classes which turned out to be similar but different - and both very enjoyable. Options for cooking classes included a choice of learning to make classic Oaxaca fare, or a vegetarian option. A class specially designed for making chocolate was also offered. We opted for the non-vegetarian classic approach which included making mole sauces.
One class was with Quinta Brava (https://www.quintabrava.com/) and the other Etnofood located around the corner from our apartment (https://www.etnofood.com/en). Classes were small and included other visitors from various parts of the world.
In each case we met with our chef who walked us to local markets to purchase fresh ingredients for our pre-planned menus. We also got to sample what we were buying plus explanations as to how to choose the best ingredients. Chefs were always happy to answer any and all questions.
We were taught how to prepare the ingredients, correct timing and temperatures, and when to add the ingredients. At the end of each class we we able to eat our creations.
